Strawberry Shortcake Popsicles

Last week I picked up the July issue of the All You Magazine at my local BJ’s because the Strawberry Shortcake Cupcakes (of course!) caught my eye. When I got home I was so excited to sit down and scroll through the pages. All You really is a great magazine that you can truly benefit from the coupons and ideas alone! I mean this month, it had over $30 in deals which is pretty awesome for families. I love all of the ideas it gives you from the money saving coupons and deals, it really pays for itself. It’s only $2.99. A few things I loved about this issue besides the cupcakes was the range of topics from ways to stretch your dollar, to how you can save hundreds with free apps and kick-start your metabolism and drop pounds — everyone wants to know how! You can find never-ending ideas, recipes, and money savings coupouns inside and it will soon become your favorite magazine. Promise!

But what got me was the delicious family recipes! With 31 yummy recipes inside , I felt inspired to get into the kitchen and whip up a dessert for a warm summer night. Believe me when I say I am not Martha Strewart but the recipes inside really inspired me along with the coupons inside made me just go for it. I really saved at the check-out line thanks to the coupons inside too. All You really helped me kick-start my idea for this summer treat — Strawberry Shortcake Popsicles. After looking through All You Magazine, I put together a little recipe which was originally adapted on Kraft.

Strawberry Shortcake Popsicle // this makes 6

– 10 Vanilla Oreo Cookies
– 3 Activia Vanilla yogurt
– 1 Package of Strawberries
– Popsicle sticks
– Dixie Cups

1. I rinsed and cut off the top to my strawberries. You can either purée in a food processor or just mash them with a fork. I just decided to mash them up with a fork to get them to the consistency I wanted.

2. In another bowel I crushed up the Oreos and mixed in the Vanilla yogurt, which will be the middle layer.

3. Once I had the strawberries and yogurt mixture ready, I got the dixie cups out ready to fill. I filled one layer with strawberries and placed a popsicle stick inside the cup. Then I did a layer of the yogrut mixture, followed by another layer of the strawberry mixture.

Tip: Double up on the Dixie cups to really make the mold freeze well. Otherwise, the Dixie cups seemed flimsy and not as strong while freezing. You want the popsicle to mold well.

4. Place in the freezer until they are completely frozen which took about 2 hours. However, it varies depending on freezer settings. Once they are frozen, I cut a little sit at the top of the dixie cup to carefully take it off without letting the popsicle lose its shape.

I was happy with how they came out but I didn’t have much time to take pictures. They melt quickly! But, my taste testers approved and they were gone in seconds. If you are entertaining another way to serve them is in a pretty dish with fresh fruit surronding them because of how quickly they do melt.
