Whole Wheat Dark Chocolate Chip Cookies

King Arthur and his knights must have had some awesome baking parties at that round table of theirs, I imagine. That’s the only thing I can figure because the King’s got some top-notch flour named after him. It’s my brand of choice, especially when it comes to the whole wheat variety. I thought that’s something you should know because Kim Boyce has a great cookbook out called “Good to the Grain” that shares an oh so perfect whole wheat chocolate chip cookie recipe that I’m going to be passing on to you today, and you’re gonna want to use the right flour.

Between the hearty texture of the whole wheat and the richness of the chunky dark chocolate, the combination provides an unsuspecting and sophisticated twist on the classic chocolate chip cookie that is sure to surprise and satisfy you, especially if you bite into one as soon as it’s just cool enough to handle. That ooey-gooey dark chocolate is best digested in all its warm glory. Trust me. I speak from experience.

Whole Wheat Dark Chocolate Chip Cookies 
{makes about 2 dozen}

[ingredients]

3 cups whole wheat flour

1 1/2 teaspoons baking powder

1 teaspoon baking soda

1 1/2 teaspoons kosher salt

2 sticks cold butter, cut into small pieces

1 cup dark brown sugar

1 cup sugar

2 eggs

2 teaspoons vanilla extract

8 ounces dark chocolate, roughly chopped

Prep Preheat oven to 350 degrees. Line a cookie sheet with parchment.

Mix Whisk the whole wheat flour, baking powder, baking soda and salt together in a medium bowl. Set aside. In a large bowl, beat the butter and sugars. Once they are creamy, add the eggs {one at a time} and vanilla. Beat to combine. Add the dry ingredients in batches and mix. Finally, add the chopped chocolate and just stir to incorporate.

Portion & Bake Scoop balls of dough that are approximately 2-3 tablespoons worth. Bake for 16-20 minutes, rotating the pans if you are cooking more than one pan full at at time.
