This creamy, crunchy, nutty dip gets me eating a record number of apples each year. I’m not sure if the health benefits of the apple are cancelled out by the cream cheese and sugar, but I’m too addicted to find out.
Passed down from my Aunt Paula, this recipe has absolutely nothing to do with taffy and everything to do with apples and dip. I really have no idea who named it and why they chose “taffy”, but the title has stuck around this long, and I wasn’t about to change it.
{enough for generously pairing with 4 large apples}
[ingredients]
_________________________
8 oz. cream cheese, softened
3/4 cup light brown sugar
1 tsp vanilla
1//2 cup dry roasted, unsalted peanuts, coarsely chopped
[directions]
_________________________
Beat. In a medium bowl, beat cream cheese, brown sugar, and vanilla until smooth.
Mix. Stir in chopped peanuts.
Enjoy. Dip your apple of choice {mine is gala or jonagold} and delight in the creamy/crunchy goodness. Cover and refrigerate leftovers.
