If you’re looking for something crunchy and munchy to go along with your hummus or dip, I have a simple, easy peasy recipe that might just fit the bill. While I enjoy pita chips from the store from time-to-time, I actually much prefer this quick “homemade” method. The process is short and sweet, and so will be my commentary. I’ll leave you to it. Enjoy friends!
Parmesan Pita Crisps
{makes 6 dozen}
[ingredients]

6 6-inch diameter pita breads
6 tbsp olive oil
1 1/4 C freshly grated parmesan cheese
coarsely cracked black pepper
sea salt

Prep. Preheat oven to 325 degrees F. Cut each pita bread into two halves. Pull the halves apart and place insides facing up. Brush the surface with olive oil and sprinkle with parmesan cheese and black pepper or sea salt, to taste. Cut each half into 3-4 wedges. Arrange pita wedges in a single layer on large baking sheets.
Bake. Bake until pita wedges are golden and just crisp, about 12 minutes. Can be prepared 3 days ahead. Cool completely. Store in an airtight container at room temperature. Rewarm in 325 degree oven about 5 minutes.
