Italian Wedding Cake Cookies

Hello again and Happy December! I have been dying to share with you my mom’s recipe for easy Italian Wedding Cake Cookies and I thought that the first day of my favorite month of the year would make for perfect timing. These cookies only have 5 ingredients and 2 steps so they are super easy to make. I’d say the hardest part is waiting for an hour for the dough to chill but other than that it is impossible to mess this up.

The base is basically a shortbread but with the addition of vanilla extract and crunchy sweet pecans they make these a little more special. The light dusting of confectioners sugar on the outside of the cookie make for a great addition for your holiday dessert table too!

Ingredients

1 c butter, softened

1 c confectioners sugar

1/2 tsp vanilla extract

1 3/4 c flour

1/2 c finely chopped pecans

Instructions

1. In medium bowl with mixer on medium, speed, cream butter and 1/2 c confectioners sugar until light and fluffy. Add vanilla and flour and continue beating until just mixed. Stir in pecans then cover with plastic wrap and chill in the refridgerator for one hour.

2. Preheat oven to 350. Shape dough into 1 inch balls sand place on cookie sheet. Bake for 15 minutes and let stand on cookie sheet for a couple minutes before transferring them to a cooling rack. Let cool completely then roll in remaining 1/2 c of confectioners sugar.
